Lemon Tart

Base

  • Butter (couple of tablespoons)
  • Sugar (1/3rd of a cup)
  • Almond meal (150g pack)
  • Vanilla Essence (1 tablespoon)
  • Plain flour (1/2 cup)

Method

  1. Combine together to form crumbs, then pour into tart mould and press on base & edges
  2. Cook for 10mins, at 180 degrees

Curd

  • 1/3rd cup sugar
  • 1/3rd cup of lemon juice
  • 1/4 cup thick cream
  • 2 teaspoons of grated lemon rind
  • 3 eggs

Method

  1. Combine everything, and mix until smooth
  2. Cook for 30-35mins, at 180 degrees in the oven
